What is a dinked center, and do I need one?

A dinked 7 inch has the large center hole. An un-dinked 7 inch has the standard small one. We press both, and the choice does not change how the record sounds.

Dinked records are the jukebox style, and they need a spindle adapter or a wide spindle to play. Un-dinked is the safer default if you do not have a reason to pick otherwise, because it plays on anything.
